Pricing Insight undertook consumer research into value perception and price elasticity for Huon Aquaculture’s premium smoked salmon offer. The work informed a repackaging and rebranding strategy, alongside the development of a more sophisticated category strategy with Woolworths’ buying team to build Huon’s premium position.

Premium positioning needs to mean something to the consumer. The commercial question for Huon was how consumers valued its smoked salmon, how they responded to price differences and what that meant for the brand’s position within the category.
Huon Aquaculture is a Tasmanian salmon producer whose current brand presentation continues to emphasise premium quality. For this engagement, the task was to connect consumer understanding with practical decisions about pricing, packaging and brand positioning.
Pricing Insight researched consumer perceptions of value and price elasticity: how sensitive consumer demand was to price. Bringing those questions together helped distinguish the appeal of a lower price from the reasons a consumer might prefer a particular product.
A key finding concerned consumers with a strong preference for Huon. The consumer testing identified a segment that valued the product sufficiently that cheaper alternatives were not an attractive reason to switch.
This distinction mattered for the premium strategy. It suggested that consumer preference, rather than price alone, needed to be central to decisions about Huon’s positioning and how its value was communicated.
The commercial implication was to understand the consumers for whom Huon was meaningfully different, rather than assume that everyone in the category would respond to the same price proposition. The research provided a basis for considering the brand, its presentation and its pricing together.
The research informed a repackaging and rebranding strategy designed to support Huon’s premium position. Packaging and brand presentation became part of the pricing strategy, rather than separate design decisions.
The purpose was to connect the consumer’s perception of value with the way the product was presented. A premium offer needs both a reason to be preferred and a clear way to communicate that reason at the point of purchase.
The work also supported the development of a more sophisticated category strategy with Woolworths’ buying team. This connected the consumer research with the role Huon could play as a premium brand within the smoked salmon category.
That approach brought three decisions together:
The focus was broader than an individual price point. It was a coordinated approach to the consumer proposition, the brand’s presentation and its place within the retailer’s category.

Pricing Insight helped translate consumer research into a repackaging and rebranding strategy and a more developed premium category proposition. The engagement connected an understanding of value perception and price sensitivity with decisions involving both the brand owner and the retail buying team.
The case illustrates why premium pricing cannot be considered in isolation. Consumer preference, packaging, branding and category strategy need to support the same commercial proposition.
